Baked Italian Chicken

Quick and Easy dinner recipe for the stay-at-home mom, and the entire family will love.



Creating another meal for my family to enjoy. Every meal is full of my heart and soul and life-giving food. Anything I can make where I have to pull veggies off the shelf and sauté is a win in my book. This is one such recipe. I have been making this meal for quite some time now and it’s one of our favorites and has become a staple.



For a while we called this meal, that chicken dish but after several satisfied times, it deserved a name. Now it’s called Baked Italian Chicken. Full of Italian flavors, chopped onions and garlic, you really can’t go wrong.


This dish is my husband’s favorite meal. It can be served over rice or noodles of any kind. My family’s particular favorite is spinach noodles.


 

List of Ingredients:

  • 4 Chicken Breasts, cubed

  • 2 Tb coconut oil, olive oil or avocado oil

  • 1 white onion, chopped

  • 4 garlic cloves, minced

  • 1/2 C chicken stock or water

  • 1- 8 oz cream cheese block

  • 1 package of Italian dressing mix

  • 1 - 10 oz carton of petite tomatoes, sliced in half

  • 1 1/2 C chopped fresh spinach

  • 2 tsp. garlic powder

  • salt and pepper

  • 8 oz mozzarella cheese, shredded


Step 1: Let’s Get Started


  • Preheat your oven to 350°F

  • Cube chicken breast and place in oven safe casserole dish.

  • Chop onions and garlic.

  • While your oven preheats, place your skillet on the stove and melt your oil over med-high heat. Sauté the onions and garlic until tender. Remove from heat.

  • Place the chicken stock or water and the cream cheese block in a microwave safe bowl. Microwave to melt cream cheese. Once melted, whisk to smooth.

  • Continue to whisk in the Italian dressing mix, sautéed onion and garlic, garlic seasoning and pepper until combined.

  • Stir in chopped spinach and sliced tomatoes.

  • Pour mixture over chicken.

  • Bake for 30 minutes or until chicken is done. Stir occasionally to keep the chicken from sticking.

  • Meanwhile, boil noodles. Drain when done.

  • Once chicken is done, sprinkle mozzarella cheese on top. Place back in oven for only a few minutes until cheese is melted.

  • Serve over rice or noodles
